It Starts in Guatemala

The foundation of this coffee is a single origin Guatemalan bean — and Guatemala is one of the world's great coffee origins for good reason. Grown at high altitude in volcanic soil, Guatemalan coffees are known for their full body, rich chocolate notes, and a natural sweetness that makes them ideal candidates for barrel aging.

We chose a Guatemalan base specifically because its flavor profile complements bourbon beautifully. The chocolate and caramel notes in the bean echo the vanilla, oak, and caramel in the barrel — they don't fight each other, they amplify each other.

30 Days in a Bourbon Barrel

After sourcing, the green (unroasted) coffee beans are placed inside a used bourbon barrel for 30 days. During this time, the beans absorb the residual bourbon, oak, and vanilla compounds that have soaked into the wood over years of whiskey aging.

This isn't a quick process or a shortcut. Thirty days is the sweet spot — long enough for the beans to absorb meaningful flavor from the barrel, short enough that the coffee's own character isn't overwhelmed. The result is a coffee that tastes like itself, just with an extraordinary added dimension.

Roasted to Order

After aging, the beans are roasted to order — meaning your bag is roasted fresh when you place your order, not sitting in a warehouse. This matters more than most people realize. Fresh roasted coffee has a vibrancy and complexity that pre-roasted, shelf-sitting coffee simply can't match.

The roast is calibrated to honor both the bean and the barrel: dark enough to bring out the chocolate and caramel notes, careful enough not to burn off the delicate bourbon and vanilla flavors absorbed during aging.
