Coffee is 98% water. Which means the quality of your water is the quality of your coffee. This is the ingredient most people completely ignore — and it's costing them a better cup every single morning.
What's in your water matters. Chlorine kills flavor. Heavy minerals create off-tastes. Soft water under-extracts. Hard water over-extracts and scales your equipment. The ideal water for coffee is filtered, with moderate mineral content — around 150 ppm total dissolved solids.
Filtered tap water is usually fine. A basic carbon filter (Brita, PUR, etc.) removes chlorine and most off-tastes. This is the minimum. If your tap water tastes good filtered, use it.
Bottled water is inconsistent. Some bottled waters are great for coffee. Some are terrible. If you're going to use bottled water, look for one with moderate mineral content — not distilled (too soft) and not heavily mineralized.
Distilled water is the enemy. Zero minerals means zero extraction. Coffee brewed with distilled water tastes flat and lifeless. Don't do it.
Temperature still matters. Even perfect water at the wrong temperature will ruin the cup. 195–205°F. Every time.
The simple fix: filtered tap water at the right temperature. That's it. That's the upgrade most people need and never make.
