The Ultimate Pour Over Coffee Guide

The Ultimate Pour Over Coffee Guide

Why Pour Over?

Pour over coffee is one of the most rewarding brewing methods you can master. It's simple, requires minimal equipment, and produces a clean, bright cup that lets the true character of your coffee shine. At Foxhole Coffee Co., we believe great coffee starts with great beans — and pour over is the method that shows them off best.

What You'll Need

  • A pour over dripper (Hario V60, Chemex, or Kalita Wave all work great)
  • Paper or metal filter
  • A gooseneck kettle
  • A kitchen scale
  • A timer
  • Freshly ground single origin coffee
  • Filtered water heated to 200°F (93°C)

The Coffee-to-Water Ratio

The golden ratio for pour over is 1:15 to 1:17 — that's 1 gram of coffee for every 15–17 grams of water. A good starting point is 25g of coffee to 400g of water, which yields about 12 oz of brewed coffee.

Grind Size

Use a medium-fine grind — similar to table salt. Too coarse and your coffee will taste weak and watery. Too fine and it'll be bitter and over-extracted. Consistency matters, so a burr grinder is worth the investment.

Step-by-Step Brewing Instructions

  1. Heat your water to 200°F (just off the boil — let it sit for 30 seconds after boiling).
  2. Rinse your filter with hot water to remove any papery taste and preheat your dripper and mug. Discard the rinse water.
  3. Add your ground coffee to the filter and give it a gentle shake to level the bed.
  4. Start your timer and bloom: Pour just enough water to saturate all the grounds (about 50g) and wait 30–45 seconds. This releases CO₂ and primes the grounds for even extraction.
  5. Continue pouring in slow, steady circles from the center outward. Pour in 3–4 stages, adding water every 30–45 seconds, until you reach your target weight (400g total).
  6. Let it drain — total brew time should be 3:00–4:00 minutes. If it's faster, grind finer. If slower, grind coarser.
  7. Enjoy! Remove the dripper and savor your cup.

Tips for the Best Cup

  • Use fresh beans: Coffee is best within 2–4 weeks of roast. Check the roast date on your bag.
  • Grind fresh: Grind right before brewing for maximum flavor.
  • Water quality matters: Filtered water makes a noticeable difference.
  • Keep notes: Adjust your grind, ratio, or pour speed and note what changes.

Best Coffees for Pour Over

Pour over shines brightest with single origin coffees — beans from one specific farm or region that carry distinct, traceable flavors. Light to medium roasts tend to work best, highlighting floral, fruity, or tea-like notes that heavier roasts can mask.
