Ethiopia : The Single Origin That Changes How You Think About Coffee

If you've never had a truly great single-origin coffee, Ethiopia is where you start. It's the coffee that makes people realize what they've been missing.

Yirgacheffe is a region in southern Ethiopia — the birthplace of coffee, where wild coffee plants still grow in the forests. The coffees from this region are unlike anything else: bright, floral, fruity, complex. Notes of blueberry, jasmine, lemon, bergamot. A clean, tea-like body. An acidity that's vibrant rather than harsh.

It doesn't taste like what most people think of when they think of coffee. That's the point.

How to brew it: Pour-over or Aeropress. These methods let the delicate flavors shine. Don't use a French press — the metal filter lets too many fine particles through and muddies the cup. Don't use a drip machine — the temperature is too inconsistent. Pour-over, medium-fine grind, 200°F water, slow and steady.

Drink it black. Cream and sugar will bury everything that makes this coffee worth drinking. Trust the bean.

Buy it fresh. Single-origin coffees are more sensitive to staleness than blends. Order it, brew it within two weeks, and taste what coffee is supposed to taste like.
